The macaroons of Amiens
Treat yourself to a gourmet break during your visit to Amiens, only 45 minutes from the Beauvais-Tillé Airport.
Since the 16th century, this speciality introduced by Catherine de Médicis has been an essential treat for gourmands visiting Amiens. This Picard sweet made from powdered almonds and honey is nothing like the chocolate macarons you're familiar with. The Amiens macaroon has become world famous since the 1992 International Sweets and Biscuits Fair, at which it won the Grand Prix de France for regional specialities.
Following is a short recipe. But if you ever pass through Amiens, be sure to stop by the delicious Trogneux shop!
Amiens macaroon recipe:
Ingredients: 250 g of powdered almonds, 2 egg whites and 1 yolk, 200 g of sugar, 1 tablespoon of honey, 1 tablespoon of apricot or apple jelly, a few drops of vanilla extract, 1 teaspoon of bitter almond extract.
- Mix together the powdered almonds, sugar, honey and vanilla.
- While stirring, slowly incorporate the egg whites.
- Add the jelly.
- Set aside for 6 to 8 hours.
- Roll a long cylinder 4 cm in diameter and cut 2-cm thick rounds.
- Place the rounds on a buttered sheet of wax paper, then glaze with the egg yolk.
- Bake at 180° C for 20 minutes.
- Set aside to completely cool. Enjoy!!!
